✨Aqua faba is a revolutionary cheap plant-based ✨Aqua faba is a revolutionary cheap plant-based egg replacer that has changed the vegan baking game. ✨Made from the liquid of drained cooked chickpeas (or other legumes), it is best known for its ability to mimic egg whites in meringues and macarons but it’s also used as a binder, emulsifier, or thickener. It makes amazing mayo and extra moist cake batters too.

👩🏾‍🍳Make your own! If you bake a lot, making your own aqua faba is even cheaper and better for you. Follow @mtlveg for a video I’ll soon post on how to make a stable aqua faba at home and give you idea on what to do with all those chickpeas!
 
Swapping ratio:
3 tablespoons of aqua faba = 1 egg 

If you’re starting with aqua faba try to find vegan bakes rather than replacing it in your standard recipes for best results. The Vegan Baking Bible by Karolina Tegelaar is an amazing book to go in depth. Her recipes are always a 10/10.

🥚So, why are eggs so expensive right now?🐓
Over 50 million chickens have died amid a record-breaking outbreak of avian flu in the United States in 2022. While the impacts on Canada are not as severe, the worldwide break out caused lease 4.7 million hen deaths in Canada. Then hens die of the disease or are killed inhumanely to prevent the spread. This factors and other rising costs have driven up the cost of eggs. Scientists are also worried about cross over of the flu into humans (Sources: CBC News, CBS News, NPR). Removing eggs from baked good if a great way to reduce your consumption and curb some of these risky farming practices caused by the large demand for eggs.

This “Meat”ball sub has changed everything for This “Meat”ball sub has changed everything for me! 🤤 As much as I enjoy fresh falafel, I always find it tastes dry after a day or two in the fridge. Warming them in the oven and combing with it with hot saucy marinara was everything! It brought me right back to the days of meatball subs over 22 years ago. Let’s just say, it hit the spot. 

What you need:
👉🏾sub rolls
👉🏾vegan mayo
👉🏾falafels (4 to 8 per sub depending on size)
👉🏾marinara, I made my own quick on the stove top 
👉🏾 vegan parmesan 
👉🏾 Italian dressing ( I made my own, vinegar, oil, garlic & dried herbes)
👉🏾fresh basil & arugula or greens of choice

You can go entirely store bought or whip it up from scratch. Once you have what you need, it comes together in 10 minutes. Bon appétit!

Happy Lunar New Year 🧧 While it’s not part of Happy Lunar New Year 🧧 While it’s not part of my culture to celebrate Lunar NY, I love to learn about the symbolism and family connections tied to festive foods like dumplings. I love the idea of making dumplings with family or friends so my daughter and I made these dumplings from scratch a few weeks ago. 

They aren’t beautiful since we lack the experience of pleating them but the taste is incredible. 

I filled mine with shiitake mushrooms (my personal fave) and froze them up. 

✨Having frozen dumplings in the freezer is a secret weapon for whipping up a delicious meal in a moments notice. I highly recommend. 

To freeze: line your dumplings on a tray, pop in the freezer for an hour then transfer to a reusable ziplock. 

✨Today in honour of Lunar NY, we cooked them up for lunch. 

 🥟 Dumpling wrappers are an easy dough to prep at home and they are naturally vegan. Try it! Fillings can vary and usually include pork but plant-based versions typically have tofu, mushrooms and cabbage.

For the recipe, I prefer to point you to another creator: follow @hellolisalin’s recipe and her YouTube video. I’ve looked at many examples and I found hers to be the easiest to follow. My way of making the wrappers is not traditional though since I like to use a circle cutter and I roll them out in a pasta machine which I find easier. traditionally they are rolled out one by one by hand. I think you can work in the way that you feel best.

My video upcycling wine bottles as oil and vinegar My video upcycling wine bottles as oil and vinegar bottles has gone low-key viral. Many people see me transfer oil from an older bottle of to the new wine bottle and wonder what’s the point.
 
My older oil bottle was overused, and the cap was damaged, so I opted to use a wine bottle instead of buying a new one. The point is to use the cutest and more effective bottles to hold my products. This makes cooking more ergonomic and helps things look stylish. Adding the pouring spout also reduces waste and saves money by not over-pouring products.
 
Even if you don’t refill at your local zero waste or specialty shop, this is more eco than buying a new set of oil and vinegar bottles. It also works great if you buy the larger gallon size of oil to dispense at home. Buying like this helps save money, especially for expensive oils like olive.

A move towards plant food and zero waste living is better for the planet but what about your wallet? This is a question I have long tried to answer. I believe the climate-forward diet is indeed cost-saving, but it largely depends on your family dynamics and how much time you spend cooking. 
 
👩🏾‍🍳I love to cook, so it’s easier for me despite being a full-time professional and a mom. Loving to prep food is key. Meal planning and a supportive partner also help a great deal. 

✨I could also save money my buying non-organic bulk ingredients and less expensive oils. I choose to buy high quality ingredients because the quality will impact the taste and the nutritional profile. I also buy fancy organic bread which is also much more costly but worth it for me. I don’t always buy organic produce however because I find the price difference too steep, especially in the winter when there aren’t many local producers. Either way, there is a way to save even more if needed. 
 
We spent $155 on groceries this week, I’m not sure if that’s high or low but given today’s prices it seems reasonable. What do you think?

Green cleaning tips ✨ When I say these are amazi Green cleaning tips ✨ When I say these are amazing, transformational, show stopping, I mean it! 

🤯Conventional cleaning products have given me the worst headaches for years, but I kept using them because the marketing was so effective. 

🤰🏽 when I was pregnant and always nauseous, I switched to green cleaning. I was amazed to see that Castille soap could effectively clean almost anything. 

✨Castille is all the things: biodegradable, fair trade, non-toxic, cruelty-free and organic. 

@drbronner is the most common brand, but you can also find your locally-made versions in bulk. Remember, it’s a very potent product, so always dilute. You can find dilution ratios on the company’s website.

1️⃣All-purpose cleaner: mix half Castille soap with half water for a powerful product. Use this mix to clean the toilets, shower, bathtub and sinks. I love that it’s safe for the body, so I don’t have to worry about harmful chemicals when my 3yo takes her bath. Always rinse after use.

2️⃣Make-up brushes: Drop a little pure Castille on the brush, lather for a minute and rinse. Clean in 2 minutes. Before this, nothing else worked so well for me.

3️⃣Hand, body and face wash: Castille is great for the body. Mix 1 part Castille soap to three parts water (1:3) to use on your body. Add to foaming dispensers for the face or hands. It foams like a dream! You can also customize it.

4️⃣Mop the floors: To remove build-up, put a tablespoon or two in your mop water. 

5️⃣Reusable wipes: Mix 1 cup of water and 1 ounce of Castille soap for reusable wipes. Add a non-comedogenic oil if you want to use them on your face. I like to use them on my toddler’s grubby hands.

Note: When making cleaning products, always carefully research what chemicals are safe when mixed. Avoid mixing Castille with an acid (vinegar, peroxide, citric acid).
